I love Mexican food! In fact, the first four out of five dates Keith and I went on, we ate Mexican food. There’s no doubt after all these years he’s really tired of it by now. He loves me though, so we probably still eat Mexican food more than any other meal. I’m a bit of a picky eater, so it wasn’t until after kids that I finally tried avocados, and then I tried guacamole. I was hooked! Now, I don’t love everyone’s guacamole. It can’t be blended like baby food, it has to have chunks of avocado and veggies in it.
Recipe
My husband loves me, so he set out to make me the best homemade guacamole. Did I forget to say that he can’t stand the stuff, but he wanted me happy, so he went to work. Here is what he came up with.
INGREDIENTS
3 Large avocados 🥑, ripe
1 Lime 🍋, juiced
1 small white onion 🧅, finely diced
2 Roma Tomatoes 🍅, seeded and diced
1 tbsp. fresh Cilantro 🌿, finely chopped
1 large Jalapeno 🌶️, seeds removed, finely diced
2 Garlic cloves 🧄, minced
1/2 teaspoon sea salt🧂
Use Large avocados for this recipe. If you can only find small avocados, add one more.
Use a fresh lime for the best flavor, NOT lime juice in a bottle.
TIPS
Guacamole is best when using the freshest ingredients. Look for avocados that are ripe, but firm. DO NOT use soft and mushy avocados. Pick avocados that still have the stem attached (avocado with no stem tend to have brown spots on the inside). Gently press on one end. It should be firm, but have a slight give to it.
🔥OPTIONAL: For a spicier and/or different flavor profile of the guacamole –
ADD 1/2 tsp Chipotle pepper 🌶️ (my favorite so I recommended it)
OR 1/2 tsp Cayenne pepper 🌶️ and 1/2 tsp Ground Cumin 🌿
INSTRUCTIONS
Slice the avocados in half, remove the pit, and scoop into a mixing bowl.
Add lime juice to bowl.
Mash the avocado and lime juice with a fork until smooth but still slightly chunky.
Add the remaining ingredients and stir together.
Add a pinch more salt and/or lime juice to suit your taste.
STORAGE
If you have leftover guacamole (or are making it to be served at a later time), you can use the techniques below to store your guacamole for 3 to 4 days in the refrigerator.
Option 1 (recommended): Scoop the guacamole into an airtight bag like a Glad® Flex’n Seal™ Freezer Quart Bags. Remove ALL air, seal the bag, and store it in the fridge for up to four days until ready to eat and enjoy.
Option 2: Scoop guacamole into a storage container and pat it down firmly with a spoon so it’s level and forms a seal around the edges on top. Add about 1/2 inch of water to the top. Place the lid on the storage container and store it in the fridge. Ready to enjoy the guacamole? Take it out of the fridge, drain the water off of the top, and stir until remnant water is combined. NOTE: With this method, the longer you leave it in the fridge the more watery it will be when you use it later.
