Tired of the same old breakfast routine? I definitely am! I tend to lean towards yogurt and a granola bar. It’s easy and quick. As Keith and I have been trying to eat healthier, I have been looking for different breakfast options that will also be tasty. In comes bagels….I love bagels! Remember that post on Panera Love? Every time I went to Panera I had the same thing…..bagels. So, I had to search for a healthy bagel option. And I found these yummy treats.
These power-packed breakfast bagels are the perfect way to fuel your morning and keep you satisfied until lunchtime. Packed with protein, fiber, and essential nutrients, high-protein bagels are a game-changer for anyone looking to improve their diet and boost their energy levels.
Why Cottage Cheese Bagels?
- High in Protein: Cottage cheese is a fantastic source of protein, which helps you feel fuller for longer and supports muscle growth and repair.
- Versatile: These bagels can be enjoyed with your favorite toppings, whether it’s cream cheese and smoked salmon, avocado and eggs, or simply butter and jam.
- Easy to Make: With just a few simple ingredients and a bit of elbow grease, you can whip up a batch of these bagels in no time.
Ingredients:
- 1 cup oat flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup cottage cheese (blended until smooth)
- 1 egg (for the egg wash)
- Everything seasoning (or whatever you want to top your bagel)
Instructions:
- Blend Cottage Cheese: Blend your cottage cheese until smooth.
- Combine Ingredients: In a large bowl, combine the cottage cheese, oat flour, baking powder, and salt. Mix until a dough forms.
- Shape the Bagels: Divide the dough into 6 equal portions. Roll each portion into a long rope and form a circle, pinching the ends together.
- Bake: Place bagels on a baking sheet lined with parchment paper or my preferred method is a donut pan. Bake in a preheated oven at 375°F for 15-20 minutes, or until golden brown.
- Serve and Enjoy: Let the bagels cool slightly before serving. Top with your favorite toppings and savor the deliciousness!
Tips for the Perfect Bagel:
- Don’t Overwork the Dough: Overworking the dough can lead to tough bagels. Mix the ingredients just until combined. I usually knead the dough 8-10 times.
- Get Creative with Toppings: Experiment with different toppings to find your favorite combination. Some ideas include:
- Cream cheese and smoked salmon
- Avocado and eggs
- Peanut butter and jelly
- Hummus and vegetables
I wasn’t sure how I would feel about cottage cheese in anything. I’ve never been a fan, but I’ve used it in a few recipes lately, and it’s amazing. I promise you, you will not be disappointed.
