I LOVE TACOS!!! I mean, I really love tacos! When Keith and I started eating a bit healthier, we started to evaluate our meals. Some of them were already pretty healthy, while others needed some tweaking. Tacos, we found, had a lot of carbs, and we wanted to cut down on carbs a bit. So, here’s what we found works great, and is incredibly yummy!
This recipe is a great way to get a healthy and delicious meal on the table quickly. It is packed with protein, fiber, and vitamins, and it is also low in calories and fat.
Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 packet taco seasoning (**For less sodium you can make your own taco seasoning, see below)
- 1 cup cooked brown rice
- 1 cup black beans, rinsed and drained
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 diced green bell peppers
- 1/8 cup chopped cilantro
- 1/4 cup shredded cheese
- 1/4 cup salsa
- 1/4 cup sour cream
- 1/4 cup guacamole or sliced avocado (my preference is the sliced avocado!)
Instructions:
- Season chicken breasts with taco seasoning.
- Heat olive oil in a large skillet over medium heat.
- Add chicken breasts to skillet and cook until browned, about 5 minutes per side.
- Reduce heat to low and cook until chicken is cooked through, about 10 minutes more.
- Remove chicken from skillet and shred with two forks.
- Add brown rice (precooked), black beans, tomatoes, bell peppers, cilantro, and green onions to skillet.
- Heat through for 5 minutes.
- Divide mixture among four bowls.
- Top each bowl with shredded chicken, cheese, salsa, sour cream, and guacamole.

Tips:
- You can add other toppings to your taco bowls, such as avocado, jalapenos, or hot sauce. Substitute tofu or other variety of beans for the chicken for a vegetarian option.
- This recipe can be made ahead of time. Simply assemble the bowls and store them in the refrigerator until you are ready to eat.
**Homemade Taco Seasoning
This recipe is easy to make and tastes much better than store-bought!
Ingredients:
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
Instructions:
- Combine: In a small bowl, whisk together all the ingredients until well combined.
- Store: Store in an airtight container at room temperature for up to 6 months.
Tips & Variations:
- Adjust to your taste: Feel free to adjust the amounts of each spice to your liking. If you like it spicier, add more chili powder or cayenne pepper.
- Add some heat: Include a pinch of red pepper flakes for extra kick.
- Smoked Paprika: Smoked paprika adds a lovely depth of flavor, but regular paprika works just fine.
- Use it on more than just meat: This seasoning blend is delicious on vegetables, potatoes, and even popcorn!
