As we get closer to the holidays, and all the calories it brings, I wanted to find some ways to replace some of our high fat desserts. Pumpkin pie is one of our favorites, so it was first on the list. I watched videos on Tik Tok, and YouTube. I tested out a few, and then decided to adjust the recipe to our liking. This turned out amazing, so I wanted to share to all of you who want to make some healthier choices.
This high-protein version is a delicious and nutritious twist on a classic fall dessert. Packed with protein from cottage cheese, this pie is perfect for those watching their weight or seeking a healthier alternative.
High Protein Pumpkin Pie
Ingredients:
- 1/3 cup pumpkin puree
- 1 1/2 cup cottage cheese
- 4 tbsp. honey
- 1/4 cup oat flour (you can substitute almond flour or vanilla protein powder)
- 1 1/2 tsp. pumpkin pie spice
- 1/2 tsp. vanilla extract
- 2 large eggs
- Granola
Instructions:
- Preheat oven to 350°F (175°C).
- Prepare pie crust: Use your favorite granola. Crush it to use as a crust. Spread on the bottom of four large ramekins or one small pie pan. (we live small, so ramekins it is for us)
- Combine ingredients: In a food processor, blend together pumpkin puree, cottage cheese, honey, flour, pumpkin pie spice, vanilla extract, and eggs until smooth.
- Pour filling over crust: Pour the filling into the prepared ramekins with the granola crust.
- Bake: Bake for 35-40 minutes, or until the filling is set. (if using a pie pan check pie at 40-45 min)
- Cool and serve: Let cool completely before serving.
Tips for a Perfect High-Protein Pumpkin Pie:
- Choose a good quality pumpkin puree: Look for pure pumpkin puree without added sugars or spices.
- Don’t overbake: Overbaking can dry out the pie.
- Serve with a dollop of whipped cream or a scoop of low-fat ice cream. (I make homemade whip cream to reduce the amount of sugar)
