Keith and I love this meal! We used to go to Chili’s just to have their Cajun Chicken Pasta, and wanted to find a way to make it at home to save a few bucks. After trying a few recipes, Keith decided to do a bit of his own thing, and here we are with a recipe that I could make daily. Give it a try, and let us know what you think.
Cajun chicken pasta is a hearty and flavorful dish that combines the spicy kick of Cajun cuisine with the comfort of pasta. This recipe is easy to follow and can be customized to your taste.
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon Cajun seasoning (More if you like a BIG kick)
- 2 tablespoon olive oil
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 3 Roma tomatoes, diced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 pound pasta of your choice (penne, fettuccine, or rigatoni work well)
- Salt and pepper to taste
Instructions:
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- Season the chicken: In a bowl, toss the chicken with the one tablespoon olive oil and Cajun seasoning.
- Sauté the vegetables: Heat one tablespoon olive oil in a large skillet over medium-high heat. Add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
- Cook the chicken: Add the seasoned chicken to the skillet and cook until cooked through, about 5-7 minutes. Note: the photo shows a full chicken breast laid over the top. We have since changed the recipe to diced chicken mixed in the dish.
- Make the sauce: Stir in the diced tomatoes, chicken broth, butter and heavy cream. Reduce heat to medium and bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
- Combine ingredients: Toss the cooked pasta with the chicken and sauce. Stir in the Parmesan cheese and season with salt and pepper to taste.
Serve immediately and enjoy!
Tips:
- For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper.
- You can add other vegetables to the dish, such as mushrooms, spinach, or broccoli.
- To make this dish vegetarian, substitute the chicken with tofu or tempeh.
