I have been on the hunt for anything that might quench my sweet tooth on my healthy lifestyle journey. It’s hard, because so many recipes are….well….let’s just say yucky. They lack taste, or the sweet side I’m looking for. I’ve tried a few, but decided that I would test out something of my own. After a couple of tries, I came up with this yummy chocolate cake. It’s a sweet, high-protein treat that contains no refined sugars or flour. It’s made with all natural ingredients, and definitely satisfies.
So let’s get started…..
High-Protein Chocolate Cake
Ingredients:
- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup honey
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 cup sugar free dark chocolate chips
Instructions:
- Prep the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Blend Cottage Cheese: In a blender, blend cottage cheese until smooth.
- Combine Wet Ingredients: In a large bowl, whisk together the cottage cheese, eggs, honey, and vanilla extract until smooth.
- Add Cacao Powder: Add cacao powder to wet mix.
- Add Chocolate Chips: Gently fold in the chocolate chips.
- Bake: Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Let the cake cool completely before serving. Dust with powdered sugar or top with your favorite frosting for an extra indulgence.
Tips for the Perfect Cake:
- Use Room Temperature Ingredients: This helps the ingredients blend smoothly..
- Experiment with Flavors: Add nuts, berries, or different types of chocolate chips to customize your cake.
- Top It Off: Dust with powdered sugar or some homemade whipped cream.
I wasn’t sure I would finally find that yummy treat, that would top off an excellent meal for me, but I did. If I’m not careful, I could find myself indulging in this every night. But, I know better. Even the healthiest of sweets isn’t great to have daily.
